Black Bean & Corn Salad
Ingredients:
- 2 cans black beans, rinsed and drained thoroughly
- 1-1/2 bag frozen corn, thawed
- 1 cup fresh cilantro
- 2 limes, juiced
- 3 tablespoons olive oil
- 1-2 teaspoon cumin
- 4 green onions chopped
- 4 baby bell peppers chopped
- kosher salt and fresh ground pepper to taste
Directions:
1. Toss all ingredients in a bowl and mix! Let chill for about 1 hour if possible it helps the flavors merry.
This is a great recipe goes perfectly with the enchiladas from our previous post. This salad is also nice for a bbq, for taco night and even serves well as a dip with tortilla chips. Clean, fresh and summery! Also travels well to outdoor gatherings since the dressing is mayo free and still delicious at room temperature.
