Sheet Pan Meatloaf Patties with Roasted Veggies
You can really roast any veggie along side these patties so please use whatever you feel like, sweet potato, broccoli, cauliflower, brussel sprouts - it all works! *All ingredients (except for the Worcestershire) available at Trader Joe's.
Ingredients:
- 1lb ground beef, 96% lean 4% fat
- 4 cloves garlic, chopped
- 5 green onions, chopped
- 2 tablespoons Worcestershire
- 1 egg
- 1/4 cup parmesan cheese
- 1/2 cup fresh basil, chopped
- handful fresh parsley, chopped
- 2 large pieces of sourdough, toasted dark
- kosher salt & fresh ground pepper
Directions:
1. Preheat oven to 425 degrees. Toast your sourdough bread to extremely dark, yet not burnt. Set aside to cool. Once cooled put in a ziplock bag to make your fresh bread crumbs you can pound with a mallet and also break apart with your hands. These are really rustic bread crumbs so the bread doesn't have to be extremely fine.
2. In a separate bowl mix together your ground beef, egg, cheese, onions, garlic, herbs, Worcestershire, and fresh bread crumbs. You can also add red pepper flakes for some heat. Form patties with your hands and set on a plate. You can put patties in the fridge to firm up but I'm usually in such a rush after work to get dinner going I skip this step.
3. On a sheet pan, lay your foil. We like to spray the Trader Joe's coconut cooking spray. Place the patties on the sheet pan and then arrange your veggies around the patties, flipping at the 15 minute point.
4. We like to serve these patties with a little Sriracha ketchup, just mix a little bit of both together to dip your patties and veggies.
