Classic Croque Madame

Ingredients:

    For the bechamel:

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated gruyere
  • For toasts:

  • 4 slices sourdough bread
  • 4 teaspoons dijon
  • 4 eggs
  • 8 slices prosciutto
  • 1 tablespoons finely chives
  • Directions:

      1. Heat pan to a medium and melt butter. When the butter has melted, add the flour and stir together for about 1 minute. Add milk and continue stirring until your roux has formed and the milk thickens, about 5 minutes. Remove from the heat then add your salt, pepper, nutmeg and shredded gruyere cheese, and stir until the cheese has melted.

      2. Preheat your broiler. Arrange 4 pieces of bread on a sheet pan. Spread Dijon on one side of each slice and top with 2 pieces of prosciutto or canadian bacon, then top with 2 tablespoon of sauce. We do our sandwiches open face but you can add another layer of toast and sauce for the traditional style.

      3. Cook under a broiler for about 3 minutes until the sauce is gold and bubbly. Turn off the broiler and move sandwiches to the lower rack of the oven on the warm setting.

      4. Back on your stove top. Spray pan with nonstick spray. Crack eggs into pan and cook about 4 minutes for a sunny side up style. Sprinkle with pepper. When eggs are done, transfer to the top of each toast. Sprinkle with a little parm, and lots of fresh cut chives.
