Quick Weeknight Wonton Soup

I was craving pho the other night but got home too late to start that broth process. Also, Trader Joe's does not carry many of the ingredients to make a traditional pho broth. Instead, I whipped up this super easy and quick soup in about 15 minutes. This quantity is for 2 people, feel free to double if you are using the whole box of zoodles and whole bag of wontons, this would be a generous portion for 4. We served this soup with generous servings of Chiu Chow Chili Oil (not available at TJ's) but available at many Asian markets. Highly reccomend!

Ingredients:

  • 2 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 tsp fresh grated ginger
  • 1/2 box of Trader Joe's Carrot Spirals
  • 1/2 bag Trader Joe's Chicken Cilantro Mini Wontons
  • 4 green onions, finely chopped
  • 1 cup shelled edamame (we used frozen)
  • 1 32 oz carton low sodium chicken broth
  • 1 jalapeno finely chopped (optional)
  • Fresh basil or cilantro for garnish
  • Sriracha for serving
  • Juice of 1/2 lime for serving
  • Additional items you could add into soup: shredded chicken, bok choy, mushroom, broccoli, squash
  • Directions:

      1. Bring soup pot to medium heat, add olive oil. Add garlic, and grated ginger and let saute. Then, add your carrot spirals to the pot (it is okay if they are still a little frozen here). Then add in about 1/2 bag of wontons, and chicken broth. Let simmer.

      2. Once heated through, add in 1 cup frozen edamame, jalapeno and green onions. Let simmer, covered for 10 minutes. If you wanted to add more veggies here, then add them to the pot and cook for additional 5 minutes.

      3. Ladle soup into bowls. Then, top with fresh basil, cilantro, more green onion, Sriracha, chili oil, hoison or soy sauce. Enjoy!
