No Bake Bourbon Peach Crisp

1. In a pan, toast oats and nuts until light brown. I sprayed mine with a little coconut oil spray. Once oats and nuts are toasted remove from heat and add one tablespoon of brown sugar and mix well. The brown sugar will melt and bind to the oats and nuts. This will make your crumble topping. Adding the sugar while still on the heat can increase the risk of burning the sugar. Set aside.
2. In a skillet, add your butter and let melt. Then add your peaches, vanilla, cinammon, nutmeg and clove and mix well. You don't have to use all of these spices but a combo of 2 would be great.
3. Once peaches have become tender, then add your two tablespoons brown sugar (or coconut sugar) and two tablespoons of bourbon. Let cook until sauce starts to thicken then remove from heat.
4. Prepare your serving dishes with ice cream, Greek yogurt or crème fraiche. Place sautéed peaches on top then sprinkle with crisp topping.
