Spicy Rice Noodle Salad with Steak & Herbs
Ingredients:
- 1 flank steak (about 1 pound)
- 1 box rice noodles
- 2 jalapeños, cut into thin rounds
- 1 teaspoon grated ginger
- 1 clove garlic, finely grated
- Juice of 2 limes
- 3 tbsp fish sauce
- 3 tbsp Trader Joe’s Sweet Chili Sauce
- 3 tbsp olive oil
- ½ Purple cabbage thinly sliced
- 1 cup fresh mint, roughly chopped
- 1 cup fresh basil, roughly chopped
- 1 cup fresh cilantro, finely chopped
- Peanuts, roasted and unsalted
Directions:
1. Mix together garlic, ginger, lime juice, fish sauce, cilantro, sweet chili sauce and olive oil. Mix ingredients in a food processor or by hand. Pour half of the marinade on steak and let marinate at least one hour. Reserve other half of marinade to dress salad. Let dressing chill in refrigerator.
2. Meanwhile, prepare your cabbage, cucumber, mint, basil, jalapenos. Set ingredients aside.
3. Prepare grill and grill steak about 3 minutes on both sides or until your preferred doneness. While the steak is grilling, prepare your rice noodles by following the provided directions on the box. Once noodles are done, rinse with cold water.
4. Once noodles have drained, mix together your noodles, cabbage, cucumber, jalapeno, mint and basil. Toss these ingredients well with the dressing so the noodles can absorb the dressing for about 10 minutes.
5. Bring steak to your cutting area and cut into long strips or cubes. Serve noodles with steak on top and sprinkled with peanuts and fresh herbs.
